Just take any produce you have, chop it up, and saute over medium heat until it just started to brown. I used bell pepper and mushrooms in this one because that's what I had. 🌶🍄
Remove from heat, then in that same skillet (cast iron recommended/stainless steel discouraged) pour over six beaten eggs. Add salt, pepper, or other seasonings you love.
Bake at 350 degrees for 20-25 minutes until eggs are set.
