You can use your favorite meat of choice in this breakfast burrito recipe (sausage and bacon are our go-tos) but this recipe can also be altered to be vegetarian! Just do a swap of the meat and add some extra veggies.

This recipe yields 12 breakfast burritos. 

1/2 lb breakfast sausage
6 eggs
2 tbsp milk
1/2 tsp salt
1/4 tsp pepper
6 oz cheese
12 small tortillas

In a medium size bowl, mix the eggs, milk, salt and pepper together. Set aside.

Cook the sausage in a skillet over medium-high heat until browned. About 4-5 minutes. Add the egg mix to the pan and cook until eggs are scrambled, stirring occasionally. About 2-3 minutes. 

To assemble burritos and prep to be frozen, lay out each tortilla on a small square of aluminum foil. Spoon a small ice cream scoop sized portion of egg mix onto each tortilla and top with cheese. Wrap each burrito in aluminum foil and freeze. Simply pull them from the freezer and microwave for 1-2 minutes. Until fully heated through. Enjoy!
